Quick and Healthy Blueberry Oat Bran Muffins

These moist and tasty muffins are SO quick and easy, and good for you too! Pop them in the freezer for a quickie breakfast-to-go, or fab for kids’ lunches.   Only 3 Weight Watchers PointsPlus for one low fat, high fiber, super-satisfying muffin!   I was pumped to find Toasted Oat Bran at Trader Joe’s. I’ve always been a huge fan of its creamy texture—kind of like Cream of Wheat meets Oatmeal. If you don’t live near a TJ’s, never fear, you’ll find it at most markets next to the oats. It’s delish for breakfast—or even as a late night snack. And since it’s a Weight Watchers Power Food, it’s ZERO POINTS if you’re following the Simple Start or Simply Filling plans.   What is Oat Bran?  I was surprised to discover that Oatbran isn’t just the ‘husk’ of the oat, but is contained in the outer layer of the ‘groat’ which remains after the shelling process. Round Challah for a Sweet New Year

Round Challah is a traditional sweet bread, served on the Jewish New Year, Rosh Hashanah, to symbolize the cycle of life and a sweet new year. A few years ago, I was blown away by my cousin Carla’s homemade honey and raisin challah at our holiday celebration. Orna and Sam with Cousin Carla September, 2011 You probably already know that I have a thing for bread. I also have a major thing for challah. And topped with cinnamon sugar?! You’ve got to be kidding me! But how could I possibly make this incredible loaf myself?  Carla agreed to come over the next day and show me how it was done—removing the fear factor, and sparking my love for baking any kind of bread. Well, truthfully, I have a bit of a love-hate relationship with yeast, which is why I’ve included step-by-step details, so that even if you’ve never used yeast before, you can do this! And most importantly, enjoy the process. The instructions below are for kneading in a stand mixer, or you can just do it the old fashioned way, with some elbow grease. On her next visit from Vancouver, Carla surprised me with my very own copy of The New Food Processor Bible, by Norene Gilletz, where she found this wonderful recipe. Highly Recommend! Both of these kind, generous bakers have inspired and encouraged me, and I hope to do the same for you! Anne Burrell’s Pignoli Cookies

If you like marzipan or almonds you will love these little chewy, almondy cuties! The first time I made them, I followed Anne Burrell’s instructions and used a disposable pastry bag. My three-year-old, Aja, had a blast piping her own cookies, which I baked in the toaster oven. She was having a hard time understanding why she couldn’t just eat the dough right out of the bag—like she does with icing. Ironically, hers turned out better than mine—which were a bit too big and thus underdone in the middle. This time I used a small cookie scoop, which I found much easier, and the cookies were all the same size (mostly) and cooked though. The slightly bigger cookies were still underdone and stuck to the parchment—and the smaller ones were a little more brown than I think is visually appealing. I thus lowered the oven temp in the recipe from Anne’s 350 degrees for 12 – 14 minutes to 300 degrees for 15 – 20 minutes. I am planning on making these again in the next few days with these changes, and I will then update this post. I still wanted to post this in the meantime because it’s a great recipe for Passover and there’s only 3 days to go! Let me know if you make it and how the oven temp and times worked out for you! I saved some of the dough for Aja and let her pipe her own little cookies using a ziplock bag. She learned how to do this from a fantastic app called Hello Cupcake!   Pine Nuts can be quite pricey; Trader Joe’s carry an 8oz bag for a great price. This is my most searched/shared/requested recipe (It has been pinned SIX THOUSAND times!!!) There is NOTHING better than a Crunchie and a cup of tea in the morning!   Kids of all ages will love to help you make them! (Note: mini rolling pin and blankie) And they’ll love to find one in their lunchbox! Fill an Oxo Cookie Jar with fresh Crunchies for a hostess gift.   Crunchies were my favorite “biscuit”—the South African term for cookies. They are to South Africa what Chocolate Chip Cookies are to America. Imagine: Mini-homemade-granola-bar meets chewy-oatmeal-raisin-cookie… but better!
