Asian Cole Slaw

This versatile slaw is light, crunchy, and refreshing—fab for summer entertaining. (And waaaaay better for you than traditional Coleslaw!) Only 5 Weight Watchers PointsPlus per serving. It pairs wonderfully with brisket or steak. (Perfect for Passover!) Goes great with Chinese Take-Out too. (Mix it with Lo Mein to bulk it up and reduce the calories.)   When I was in South Africa last November for my dad’s 80th, I helped my sweet Auntie Angie—visiting from Israel—make her popular, five-ingredient slaw for shabbat dinner. Auntie Angie’s Super Simple Slaw one green cabbage, shredded 1 cup white vinegar 1 cup vegetable oil 1 cup sugar (oy!) 4 tablespoons soy sauce It was surprisingly delicious. But a little too high in oil and sugar for me. Then, a few weeks ago, we introduced our close friends, the Hills, to Wood Ranch in Agoura Hills—the always packed BBQ joint in the LA West Valley—and the charming waitress, Mia, insisted that we try some of their most popular sides before proceeding with our order of grilled asparagus and Caesar salad. (I guess she didn’t approve!) Well, I was soooo glad that she did, because otherwise I would never have discovered their fabulous slaw! Refreshingly crispy and just a little sweet. (I wished that I had eaten more slaw and less ribs as I waddled out of there feeling like a stuffed piglet!) Idea! What if I combined Auntie Angie’s Super Simple Slaw with Wood Ranch’s Original Peanut Coleslaw, giving it an Asian twist…? I used the same colorful, crunchy veggies—and of course, the roasted peanuts, which give that sweet and salty bite.  I added ginger and garlic, and substituted rice vinegar (my fav) and lime juice, and reduced the sugar and oil.  Yummmm!!!! And totally addicting! (I have literally eaten pounds of the stuff—just cannot get enough of it!) Trader Joe’s carries Natural Rice Vinegar and Toasted Sesame Oil—both reasonably priced. Pan-Seared Turkey Cutlets with Pearl Couscous and Black-Eyed Peas

This recipe in the June issue of Food Network Magazine caught my eye; fresh, healthy, easy and yummy—and you can find almost all the ingredients at Trader Joe’s. I much prefer Israeli couscous (a/k/a pearl couscous, or maftoul) to smaller, traditional couscous. Made from “pasta pearls,” it has the same texture and satisfying toothsome bite as pasta. (Try Near East Basil & Herb Pearled Couscous for a quick and easy side dish.) I forgot to pick up a lime at Trader Joe’s (why do I ALWAYS forget a key ingredient?!), and anyway, I thought the lime and chili rub might be a) a bit plain, and b) a bit spicy for hubby And so the tweaking began… – lemon for lime – a bit of Cumin, and TJ’s lovely South African Smoke Seasoning Blend, and you have a mediterranean dish with a South African twist!                   I’d never heard of black-eyed peas until I started making my Cowboy Caviar—now my favorite and most popular savory recipe. THE BEST Cowboy Caviar—healthy dip/salad/snack >> If you haven’t tried it yet, take the leftover black-eyed peas and make a batch! (I also love the cumin in this recipe.) I used Allens canned black-eyed peas in both recipes, but you can use frozen too. You can find them at Gelsons Market If you can’t find them, substitute with black beans or even edemame! Gourmet Blends slightly sweet White Balsamic Vinegar and fruity Meyer Lemon Olive Oil add the perfect finishing touches. If you don’t have them, a splash of lemon and a pinch of sugar will do. Only 1 Weight Watchers PointsPlus value for 2 tablespoons I wasn’t sure if picky hubby or picky toddler would go for the couscous-with-veggies-side (they didn’t), so I made the pan-roasted potatoes for backup. Next time I’ll try some from Whole Foods and see how they turn out. I’ll also add a couple of diced Persian Cucumbers at the end, to up the veggies and give a bit of a crunch. Lighter Beef Bolognese

Who doesn’t have fond memories of eating Spaghetti Bolognese as a kid! This is my healthier take on Giada De Laurentiis’ Simple Bolognese—chock full of veggies, and with tips I learned from making Anne Burrell’s more complex and time-consuming, traditional Bolognese.   I love that you can make this the day before, but be warned that the house will smell so incredible that it will be hard to wait until the next day!   I learned from Chef Anne Burrell to add the pasta to the sauce in the pot, with a little pasta water (if necessary) and “marry the two together.” If I’m not using all of it, I just add an equal amount of sauce to the amount of pasta I’m using. Add a little more sauce on top of each plate, drizzle a little high-quality olive oil over the top and sprinkle some parm to finish. Yumm! Who needs Maria’s!   His and Hers     I don’t usually make two different types of pasta, but I thought this would be a good way to illustrate this gorgeous sauce. Barilla Plus Spaghetti is my fav because it has extra protein and fiber; even little Aja loves it. Sam prefers Trader Joe’s Corn Pasta because it’s easier on his stomach. Please do not use parmesan from a green can!   I found Laura’s Lean Beef (92% lean, 8% fat) at Ralph’s Market, and it was delicious. Check their website for a market near you that carries it.   I used Menage a Trois wine—because that’s my favorite wine to drink. See Trader Joe’s and Costco Shopping Lists. Make sure your knife cuts are even and the veggies are chopped small. It might sound as if you’re using a lot of salt, but you have to season every single layer, or the end product will taste bland; I learned this from Anne Burrell. Make sure to use kosher salt – it really makes a difference. I copied Alton Brown’s trick of keeping it in a sugar bowl; makes it easy to pinch. Remember that the parmesan cheese will add some salt at the end, so don’t over-salt. How to Coarsely Chop Mushrooms To coarsely chop the mushrooms; slice them with a sharp knife, and then working in batches, run your knife through them in different directions to get them chopped approximately the same size.
